Summer Strawberry Spinach Salad
Ingredients:
- 3 chopped strawberries
- 1/2 oz (15g) goat cheese
- 10 almonds sliced
- 2 cups fresh baby spinach
- 4oz/ 113g chicken (or protein of choice)
Poppyseed Dressing:
- 1 tbsp plain greek yogurt
- 1 tsp olive oil
- 1/2 tsp poppyseeds
- 1 tbsp lemon juice
- sprinkle of salt and pepper
- 1 tsp splenda (or sweetener or choice)
