Egg Chicken Salad
Egg salad made with chicken and healthy crunchy add-ins. This meal is a refreshing change up from our usual weekly lunch meals.
Easter wknd is around the corner so we’ll be using all our leftover colored eggs to make this salad, it’s one of our fav holidays since it’s celebrated in Spring and we’re getting even closer to warmer weatherÂ
Check out this recipe :
-1 soft (to medium) boiled egg
-2oz chopped chicken breast
-2 tbsp plain Greek yogurt
-1 tbsp chopped celery
-1/8 tsp garlic powder
-1/8 tsp onion powder
-1 tsp dried parsley
-1 tsp parmesan cheese
-salt and pepper to taste
Mix all the ingredients together and top it on toast with arugula, grape tomatoes and dried chives
