As a parent, I understand the constant quest for nutritious yet delicious meals that keep both parents and toddlers happy. In this blog, I’ll be sharing three of my go-to recipes that have been a hit with my own daughter: banana muffins, chicken meatballs, and strawberry frozen yogurt (Froyo). These recipes are not only wholesome and packed with essential nutrients, but they’re also incredibly simple to prepare, making them perfect for busy parents. So, let’s dive in and discover how to create tasty meals that will have your toddler asking for more!

Chicken Meat Balls

  • 1 large egg
  • 1 pound lean ground chicken 
  • 1/2 cup grated cheddar cheese
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 cup cooked spinach (chopped up really fine)
  • 1/2 cup cooked grated carrot

Mix all the ingredients together and roll them into 15 meatballs. Bake them in the oven for 20 minutes @ 400 degrees.

Banana Muffins 

  • 6 Prunes 
  • 1/2 cup 5% Greek yogurt
  • 3 large bananas (wait until they’re very ripe!)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • The second time around I added 1/4 cup chocolate chips (mini ones) and Sophia loved it!

The night before soak the prunes in water and the next day strain them and blend them with the yogurt, bananas, eggs and vanilla extract to get an even mixture. Then mix the rest of the ingredients together. Coat 12 muffin cups with a little coconut oil (or use silicone muffin cups) and bake them for 15 minutes @ 375 degrees.

Strawberry Froyo

  • 1/4 cup 5% Greek yogurt
  • 2 frozen strawberries (thawed and blended to a puree) 
  • 1 tsp honey 
  • 1 tsp sunflower seeds

Mix all the ingredients together, and leave it in a container for 30 minutes in freezer.
