There are so many benefits to eating eggs and breakfast! 

If there was one habit you should consider as a new years resolution (if you aren’t doing it now already) is starting your day with breakfast, and cooking eggs will make this habit an easy one to stick to!

I think everyone will enjoy some variation of an egg dish, and with these recipes below I think i’ll convert some non-believers into loving this breakfast idea!

But First, Why do we love eggs so much? 

  • They cook so fast! 

  • Easy way to incorporate veggies/fruit to the meal!

  • Easy to digest! 

  • The egg whites contain a lot of protein (approx 15 g per 1/2 cup or 4 egg whites)!

  • Eggs are nutritious and contain healthy fats!

Savory Omelette: 

1 whole egg

1/2 cup egg whites 

1 tbsp chopped basil 

1 tbsp chopped chives

1 cup chopped kale  

1/2 tsp onion powder 

1 tbsp parsley 

15g grated mozzarella cheese 

>Have with 1/2 to 1 whole wheat bagel 

Sweet Omelette: 

1 whole egg 

1/2 cup egg whites 

1 banana 

1 stevia packet 

1 cup spinach 

cinnamon 

1/4-1/2 cup oats 

> Blend it all together, fry it like a pancake and top it off with peanut butter or almond butter

For the Yolk Lovers: 

2 Eggs cooked sunny side up

> Add to 2 slices of whole grain toast with 1/2 mashed up avocado 

“Fried” Rice: 

1/2 cup – 1 cup cooked rice 

1 tbsp corn 

1 tbsp cooked peas 

1 cup bok choy

1 tbsp chopped garlic

1 chopped green onions. 

1 tsp soy sauce 

1 tsp oyster sauce 

1 whole egg 

1/2 cup egg whites 

>Fry it in a wok using an oil spray
